No church. Let every villager believe what they want. School is a good idea. Men taking more child-rearing responsibilities a GREAT idea. Additions on huts would be good. Builders need more to do. The dropping of objects when a villager is jostled has got to go. It would be better if you could pick up a farmer with a fish and carry him/her to the food bin to drop it in. Real world moms work, so should vv moms. A place of worship--be it a church, temple, a place in the woods, etc, should be an option.

And I think the mosiac in VV2 counts as a place of worship, but that's just me. And have you realized the most likely person they are worshipping is US, the gods and goddesses of Isola?

Whe I say a place of worship, I mean a place where the village comes together for celebrations, times of refections, etc. Some of us add spirituality to their games; others do not. That is left to the player. For me, I would like a place of gathering, fellowship, townhall, whatever. Though the flower garden in VV1 is often used for that. In my games, the temple ruins and idol is viewed as part of the downfall of the first residents and led to their destruction. I don't see them worshipping me; all I am is the middlewoman. The true 'creator' is Arthur and the staff of LDW and that is who my little people worship. But then that is just my opinion. That and five buck will buy me a cup of Starbucks

Sea animals like crab, turtle, and bad fish on the beach....some you can eat and some to throw back into the ocean.
Pets to teach children responsibility...then again the pets can go hunt for their own food or have the kids hunt for the food to feed them. Like a pet bird needs bugs.. ooo look a rotting log. Like the adults and the farm the kids would do the same for the pets. except in way less time. kids need to play.

I would like to see production lines in Virtual Villagers 3. For example, In order to make spears for fishing, you will need to get some stones and carve spearheads. You will also need to get lumber and carve it into poles. Then you need a craftsman to put them together.
So instead of just having "Food" you could have a number of different products. Lumber, stones, etc. would be required to maintain the houses in the village, so you would need lumberjacks and stonemasons in addition to builders. The way it is now, where builders just "move their hands" over the houses is silly.
You could take this idea to farming as well. Villagers could harvest grapes and then make grape juice, or pumpkins and then make pie. I want to see a full fledged economy with lots of skills for villagers to train in, lots of products and tools for the villagers to use.
