They already do get hurt. Or, at least, the scientists and builders do. Take a look at your log file and you'll quite likely see that individual villagers have been hurt while working. Their health bar will also drop.

Doctors don't have an immediate cure any more than they can heal a broken leg or cut hand immediately in real life. Time is the main healer, but you can also bring the villager back to full health with a magic stew.
