I am new to the game and see that you can set the difficulty to one of three levels, what is the difference between the three??

Ummm...it determines how easy or hard the game is!

Seriously, although the genetics are the same, it's more difficult to succeed on the higher difficulties. The settings affect fish health, ability to sell fish, etc.
