I have an adept doctor who is doing building. Will he gain the same amount of skill as he would if building were checked or would he gain more if t were checked?

The skill gained is independent of what skill is checked. The checked skill only influences what task the villager is more likely to choose, not the amount of skill they gain from any given task.
