That is something I would like to know as well. I have only played VV2 in the easy mode, because I find that hard enough in the beginning of the game.

The primary difference in the difficulty settings is the food supply, which gets progressively more restricted as the difficulty goes up. Since adequate food is harder to get, it affects all other areas of the game.
