After the initial supply of coconuts is exhausted, they reappear quite slowly. My observations (at normal speed, easy degree of difficulty) indicate that they come back in bunches of 30 at a time.

Has anyone recorded the frequency of this regrowth? For example, I know that vegetables reappear in bunches of 800 every 2 villager years. What is this period for coconuts?

I think they appear at the same time as the crops grow.

Yeah, that agrees with the one and only time I was paying particular attention to the quantity of coconuts and saw an increase. Was at same time as new veggies appeared.

Or you get an event for a fresh wind and they will all regenerate.

Hey, thanks! I never thought that perhaps an event might interfere with the regularity of such things. Now, assuming that it does, do the crops then revert back to their original schedule or do they now have a new one based on when the event happened?

I didn't happen to notice that.
