that could be true
and if they are born from your villagers, they carry a certain amount of their parents skill with them (very small amount)
if you breed two masters, you are more likely to get children with visible skill bars

Why is it that if someone tells you that there are 1 billion stars in the universe you will believe them,
but if they tell you a wall has wet paint you will have to touch it to be sure?
My advice would be to keep trying all different types of work until you find something the villager will do. Also sometimes it can take a few tries before they will get it
