What is the difference in the 3 levels of difficulties?

In VV1 the thing I recall is that the initial food supply and the number of villagers varied, but in this one I always seem to start out with 7 villagers, two of whom are adults. And one of the 5 children are always old enough to work.

Its just really the differences in how easy it will be to complete the game. I think Hard will require quite a lot of strategy.
