Yes, if the task they are doing is a skill increasing task, they'll get credit whether it is their preferred task or not.

Yes, he'll still occasionally catch crabs (Master Farmers don't always catch crabs, but they are the only ones who can.) In addition, if a villager is a Master level Farmer, he can solve one of the puzzles, whether he is set to that preference or not.

Yes, they will, but the probabilites are higher if the villager is set to have Healing as a preference.

Sometimes they will. But I've only seen it for adept or master level. The probabilities go down if you have him/her set to something else.

As a scientist gain more skill, they earn more points per research unit. The first few lessons increase the quickest, then it slows down how many lessons they need before they earn more points. Also, Masters "pass" their lessons more frequently than Adept, and Adept more frequently than Trainee, so that may be what you are seeing for "earning them faster."

Each crop is always worth 7 points, each fish is worth 9 and crab 55 (IRRC, I don't have the game on this computer.) Berries are worth a different amount depending on how many berries are on the bush when they get to the food bin (not what was there when they were picked!) They are all picked at the same speed (except if you have a runner on the job), but like the Scientists, the higher the skill, the more likely they will complete the task.

More points at the higher levels. A maxed-out Master Scientist will earn 20 points per research session at Level 2 and 33 points at Level 3. (I forget what the maximum is for Level 1 since I usually upgrade my Science Tech before they reach the maximum...)

Interesting question. I haven't noticed any impact one way or another. In a game I just completed, I opted to not get Level 3 Farming, so the one puzzle I'm missing is the Fertility Fish. I'll report back if I get any twins or triplets. But I suspect that the probability increases with each level of fertility or the puzzle completion.

Each level of Medicine raises the life expectancy of when a villagers reaches "Elderly." As you noticed, this changed from 50 to 58 with Level 2 Medicine. With Level 3, they don't reach Elderly until 66.

A woman can breed until she dies. However, if she dies whil caring for a baby, the baby will die also. \:\(

No, they can gain medicine skills by studying the medicine plants (they are more likely to stay at the cactus), curing sick villagers, or certain events. I've had the event show up when a kid gets maxed out on healing. It shows as "Apprentice" until he/she turns 14.
