It looks to me like they usually go for the first person of the opposite sex in the game file. That's usually the oldest person of that gender. The male breeders were all over my oldest woman. And I didn't care because she was several (3 or so?) years older than my villager so I figured she'd die next. Nope. So then she was nursing and died and so did the baby.

Egads! That means my very first set of triplets will not survive? What a sad day.

eta: I actually just checked in and it would seem that the triplets are okay as well as the {now} 72 year old mom. phew.

They might. I have some villagers making it 79 right now, and others dying at 72. So there can be a pretty wide range. Other people have their villagers living into their nineties. Or even past 100.
