I use this tactic when playing on hard: One farmer, the rest scientists. Research Farming 2 and Farming 3. If you like, add Science 2 in the middle. Don't bother breeding. Don't bother clearing the beach. Don't bother building the hut. Don't bother having more than one farmer. Once you have Farming 3, you will have a lot more freedom in what you do.
