...which brings us back to my question, which is "is it faster to get Science 2 then Farming 3, or to just go straight to Farming 3?"

If a scientist makes 10 points of tech with science 1 in the same time as she makes 14 points of tech with science 2, then it's faster to detour by way of science 2. I haven't accounted for the speed up as scientists get more proficient, or the risk that lack of food will weaken and kill the scientists as we work towards Farming 3. I'm assuming the former is a helpful acceleration at the end of the process and the latter is the point of the exercise.
