I know that's a morbid thing to ask, but I have solved everything except the ones needing the GC. The problem is that I am at max population and my oldest person is only 60. Is there a way other than a random event or waiting for old age to have a villager die so I can get a baby again?

Not really -- you could try to starve some of your villagers, but that's really difficult with such a high population (they'll probably try to collect food on their own), and you risk losing many more villagers than just one or two.

How would I starve them? My food is at 118,000. Do I just keep one away from the food table?
It seems I will have to wait for the oldest one to pass on.

The game automatically feeds your entire village from the bin periodically - you would have to prevent the entire village from collecting food while the food in the bin runs out.

With 118,000 food, it would be much easier to simply change the game to 2x speed and wait a day -- if you don't have any villagers with breeding as their preferred, you shouldn't gain any population while you are away (if they breed while you aren't looking, you might miss the babies and be stuck in the same position again).
