I've seen a bunch of screenshots of different houses with different furniture and rooms with customizations and improvements that I don't see available in the store. What's up with that and is it available on iPod touch?

You might have to get either the office, workshop, or kitchen upgrades in the bottom right hand section of the store. It can sometimes change the color of the room and the furniture if you purchase them.

Those are mostly image mods, and they can only be used on the Windows and Mac versions of the game. For the reasons, please see this topic.

Okay one last question: What's a mod?

A mod* is a modification that can be made to the image files of the game to display something different. Note that programming is not affected by mods, and mods are simply a visual change, not a programming alteration. Since access to the game files is needed to alter the images, mods can only be used on a Windows/Mac version of the game, as LadyCFII stated above.
