I had a bunch of Crimson Goldbulbs in a couple of tanks. When I bought the 'healing' plant, their health went down the tubes and they all died. Has anyone else had this happen?

What level of Fish Environment do you have? I've never had that happen. I suspect it was a coincidence that their demise coincided with the purchase of that plant.

I have the 2nd food level and the 3rd environment level, as well as the snail, the heater, and the oxygen thingy. I haven't noticed the healing plant making much of a difference with the health of the fish - every night when I go back in to play, I have sick fish in every tank.

With Level 3 of Fish Environment, your fish shouldn't be losing health unless they're sick or there's a problem with feeding frequency. Have you just purchased Level 3, or has the research completed? If it doesn't say "This is fully researched" the effects of Level 3 haven't happened yet.

Is it only that one species of fish that's having a problem?

Thanks. It must have been a fluke because the ones that are left all seem to be doing fine. I am just about top level on all items now and it certainly does make a difference! I have been playing 5 games simultaneously because I was getting bored waiting for something to happen in just one game.
