The easiest way to transfer screen shots from the iPod to your computer is to email them to yourself from your iPod touch. To do that, display the picture you want to transfer, tap the left-most icon, select email photo and you'll be taken to the email app where you can send your picture as an attachment. Of course, you will need to be able to connect to a Wi-Fi access point or hot spot, and you will need to have an email account set up on your iPod.
