you can use it as much as you want, but a villager can only drink from it once per creation. I've done that with one of my hard to keep well villagers and it was fine. Just remake it and keep putting the sick villager there each creation.

You can make one, use it, and then make another one right away--it will just first say "emptying pot" or something, for the villager; they will empty the potion pot first and then make the next one

They seem to be able to drink from the sickness potion multiple times, which is useful when trying to practise medicine.

I thought that was so, but later I found that if a villager drinks the potion successfully right after it's made, then waits until the potion pot timer goes under 1 minute left, the same villager can have another successful sip!
