New here and to the game. Just wondering if putting more villagers on the farm will make crop time faster??

No, there are a fixed amount of crops and they are replenished on a fixed schedule. Putting more farmers there will only make the farm be empty longer. You only need to make sure that you harvest all the crops before the next ones are scheduled, or you'll lose the crops that weren't picked in time.
