Do you mean "adept" farmer and builder? Be patient and let them farming, they'll increase their skills.
At the beginning the most important is to get food and tech points to have a new source of food.
And also, don't forget to have some doctors.
I generally play in 1/2 speed because I want not to see my villagers becoming old to early and I'm not sure that 2x speed is really helpful!
