8hr and my builder still isn't finished with the first hut... am I doing something wrong? should I have him researching until there is enough points to buy the next builder tech? Not to mention the ages and ages of waiting for enough tech points to get anything. I'm running it at 2x, though it doesn't seem like it...

This isn't really a fast game. Just sit back with a beverage of your choice & watch them work. I always put more than one builder on anything, SPOILER: there's one point when you'll need more than one master builder to do something.

Running your game at 2x only makes your villagers age faster and eat more. It doesn't make the game go faster. This game takes a lot of patience.

ok, patience isn't a strong point for me! lol
How do you go about putting two builders on something and still forge for food and research? Right now I have one builder building, two forging and two researching

I'm not sure why you're building at this point? Is this VV1 or VV2? Its not really a good idea to build or increase your population til you have enough food. In the beginning, I devide the folks between food gathering & research (to incr. food availability). But make sure you have at least one child to gather mushrooms.

Changing your settings to easy won't make any difference. When the game is running, changing the game speed also won't make a difference, only when the game is closed. The only sure-fire way to speed up the building is to put more than one builder to work. If you can't afford another villager to put on building you don't need the hut in a hurry as you can't afford to increase the size of the tribe yet, anyway.

Thanks for much for all the advice! I guess I thought I needed to build so the hut was done before they got to old to have babies.

In VV1, there is no limit of age to have babies!! (in VV2 it's 50 y/o only for females) I had a villager who was nursing at 75 y/o!! When you'll need to have 1 kid more to collect mushrooms, it will be easier to do it if the hut is built! I had to do it once and I made my 2 villagers kissing so much that the female was near to be master parent before having any baby!! She had a baby as soon as the hut was built!!
