There are actually quite a few discussions about that kind of thing happening for all three VV games, but it's not always easy to find what you're looking for in the thousands of posts we have here.
Any time a villager has a skill, they can (and often do) use that skill on their own initiative, even if it's not set as their preferred skill. It's not a big deal if, for example, a scientist decides to go fishing one time out of many work cycles, but if he decides to use his parenting skill that one time and is successful, the effects will last for 2 game years. The next time he decides to use the parenting skill, he must choose another female, and... well, you get the idea.

Most veteran players use that to their advantage in planning their population strategy.
